Smash Burger Pancakes Recipe
Ingredients:
For the Pancakes:
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk (or regular milk with 1 tsp vinegar)
- 1 egg
- 2 tablespoons melted butter (plus extra for cooking)
For the Burger Layer:
- 1 lb (450g) ground beef (80% lean, 20% fat)
- Salt and pepper, to taste
- 4 slices of cheddar or American cheese
For Toppings:
- Lettuce leaves
- Tomato slices
- Pickles
- Ketchup, mustard, or special sauce
Instructions:
Make the Pancake Batter:
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix the buttermilk, egg, and melted butter.
- Gradually combine the wet and dry ingredients until just mixed (don’t over mix).
Cook the Pancakes:
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
- Pour about 1/4 cup of batter for each pancake.
- Cook until bubbles form and the edges look set (about 2 minutes), then flip and cook for another 1–2 minutes. Repeat for all pancakes.
Prepare the Smash Burgers:
- Divide the ground beef into 4 balls.
- Heat a skillet or griddle over high heat.
- Place a beef ball on the skillet and smash it flat with a spatula. Season with salt and pepper.
- Cook for 2–3 minutes per side, adding a slice of cheese during the last minute of cooking to melt.
Assemble the Smash Burger Pancakes:
- Place a pancake on a plate, top with a smash burger patty, lettuce, tomato, and pickles.
- Drizzle with ketchup, mustard, or special sauce.
- Add another pancake on top to complete the stack.
Serve and Enjoy:
Serve immediately with extra sauce on the side or as a unique brunch idea!
Bacon Strip Pancakes
Ingredients:
1½ cups all-purpose flour
2 tsp baking powder
½ tsp salt
1¼ cups milk
1 egg
6 cooked bacon strips
Instructions:
Prepare pancake batter as usual.
Lay bacon strips on a greased skillet. Pour batter over each strip to cover.
Cook until bubbles form, then flip and cook until golden.
Serve with maple syrup.
Spaghetti Pancakes
Ingredients:
1½ cups pancake batter
1 cup cooked spaghetti
Parmesan cheese (optional)
Instructions:
Mix cooked spaghetti into pancake batter.
Pour onto a skillet and cook until golden on both sides.
Top with a sprinkle of Parmesan or serve with syrup.
Cotton Candy Pancakes
Ingredients:
1½ cups all-purpose flour
2 tsp baking powder
1¼ cups milk
1 egg
Cotton candy flavoring (optional)
Pink and blue food coloring
Instructions:
Divide batter into two bowls. Add pink and blue coloring separately.
Cook pancakes and stack alternating colors.
Top with whipped cream and cotton candy.
Peanut Butter & Jelly Pancakes
Ingredients:
1½ cups all-purpose flour
2 tsp baking powder
1¼ cups milk
1 egg
Peanut butter and jelly for topping
Instructions:
Prepare batter as usual. Cook pancakes on medium heat.
Spread peanut butter and jelly between pancake layers.
Chili Pancakes
Ingredients:
1½ cups all-purpose flour
2 tsp baking powder
1¼ cups milk
1 egg
Leftover chili
Instructions:
Mix leftover chili into pancake batter.
Cook on medium heat until golden. Flip when bubbles form.
Serve with sour cream or cheese.
Key Lime Pancakes
Ingredients:
1½ cups all-purpose flour
2 tsp baking powder
¼ tsp salt
1¼ cups milk
¼ cup key lime juice
1 tbsp lime zest
1 egg
2 tbsp sugar
¼ cup melted butter
Instructions:
In a bowl, combine flour, baking powder, salt, and sugar.
In another bowl, whisk milk, key lime juice, lime zest, egg, and melted butter.
Mix wet ingredients into dry ingredients until just combined.
Heat a greased skillet over medium heat. Pour ¼ cup batter for each pancake.
Cook until bubbles form on the surface, then flip and cook until golden brown.
Serve with whipped cream and extra lime zest.
Chocolate-Covered Strawberry Pancakes
Ingredients:
1½ cups all-purpose flour
2 tsp baking powder
¼ cup cocoa powder
1¼ cups milk
1 egg
Fresh strawberries
Instructions:
Mix dry ingredients, then add milk and egg.
Cook pancakes and top with fresh strawberries and melted chocolate.
