Cornbread Taco Bake
Ingredients:
- 1 box Jiffy cornbread mix ($1)
- 1 lb ground beef or turkey ($5)
- 1 packet taco seasoning ($1)
- 1 cup shredded cheese (cheddar or Mexican blend) ($2)
- 1 can black beans, drained and rinsed ($1)
- 1 cup salsa ($2)
- 1 egg (for the cornbread mix) ($0.25)
- 1/3 cup milk (for the cornbread mix) ($0.25)
Instructions:
- Preheat oven to 375°F (190°C).
- Brown ground beef in a skillet, drain excess grease, and add taco seasoning according to package instructions. Stir in black beans and salsa.
- Spread the beef mixture evenly in a greased 9x9-inch baking dish.
- Prepare Jiffy cornbread mix according to the package (combine mix, egg, and milk).
- Pour cornbread batter over the beef mixture and spread evenly. Sprinkle shredded cheese on top.
- Bake for 25-30 minutes or until the cornbread is golden brown.
- Let it cool for 5 minutes before serving.
