Smash Burger Pancakes Recipe
Ingredients:
For the Pancakes:
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk (or regular milk with 1 tsp vinegar)
- 1 egg
- 2 tablespoons melted butter (plus extra for cooking)
For the Burger Layer:
- 1 lb (450g) ground beef (80% lean, 20% fat)
- Salt and pepper, to taste
- 4 slices of cheddar or American cheese
For Toppings:
- Lettuce leaves
- Tomato slices
- Pickles
- Ketchup, mustard, or special sauce
Instructions:
Make the Pancake Batter:
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix the buttermilk, egg, and melted butter.
- Gradually combine the wet and dry ingredients until just mixed (don’t over mix).
Cook the Pancakes:
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
- Pour about 1/4 cup of batter for each pancake.
- Cook until bubbles form and the edges look set (about 2 minutes), then flip and cook for another 1–2 minutes. Repeat for all pancakes.
Prepare the Smash Burgers:
- Divide the ground beef into 4 balls.
- Heat a skillet or griddle over high heat.
- Place a beef ball on the skillet and smash it flat with a spatula. Season with salt and pepper.
- Cook for 2–3 minutes per side, adding a slice of cheese during the last minute of cooking to melt.
Assemble the Smash Burger Pancakes:
- Place a pancake on a plate, top with a smash burger patty, lettuce, tomato, and pickles.
- Drizzle with ketchup, mustard, or special sauce.
- Add another pancake on top to complete the stack.
Serve and Enjoy:
Serve immediately with extra sauce on the side or as a unique brunch idea!
Bacon Strip Pancakes
Ingredients:
1½ cups all-purpose flour
2 tsp baking powder
½ tsp salt
1¼ cups milk
1 egg
6 cooked bacon strips
Instructions:
Prepare pancake batter as usual.
Lay bacon strips on a greased skillet. Pour batter over each strip to cover.
Cook until bubbles form, then flip and cook until golden.
Serve with maple syrup.
