 Smash Burger Pancakes Recipe

Ingredients:

  • For the Pancakes:

    • 1 cup all-purpose flour
    • 1 tablespoon sugar
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 cup buttermilk (or regular milk with 1 tsp vinegar)
    • 1 egg
    • 2 tablespoons melted butter (plus extra for cooking)
  • For the Burger Layer:

    • 1 lb (450g) ground beef (80% lean, 20% fat)
    • Salt and pepper, to taste
    • 4 slices of cheddar or American cheese
  • For Toppings:

    • Lettuce leaves
    • Tomato slices
    • Pickles
    • Ketchup, mustard, or special sauce

Instructions:

  1. Make the Pancake Batter:

    • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
    • In a separate bowl, mix the buttermilk, egg, and melted butter.
    • Gradually combine the wet and dry ingredients until just mixed (don’t over mix).
  2. Cook the Pancakes:

    • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
    • Pour about 1/4 cup of batter for each pancake.
    • Cook until bubbles form and the edges look set (about 2 minutes), then flip and cook for another 1–2 minutes. Repeat for all pancakes.
  3. Prepare the Smash Burgers:

    • Divide the ground beef into 4 balls.
    • Heat a skillet or griddle over high heat.
    • Place a beef ball on the skillet and smash it flat with a spatula. Season with salt and pepper.
    • Cook for 2–3 minutes per side, adding a slice of cheese during the last minute of cooking to melt.
  4. Assemble the Smash Burger Pancakes:

    • Place a pancake on a plate, top with a smash burger patty, lettuce, tomato, and pickles.
    • Drizzle with ketchup, mustard, or special sauce.
    • Add another pancake on top to complete the stack.
  5. Serve and Enjoy:
    Serve immediately with extra sauce on the side or as a unique brunch idea!


 Bacon Strip Pancakes

 
Ingredients:

  • 1½ cups all-purpose flour

  • 2 tsp baking powder

  • ½ tsp salt

  • 1¼ cups milk

  • 1 egg

  • 6 cooked bacon strips

Instructions:

  1. Prepare pancake batter as usual.

  2. Lay bacon strips on a greased skillet. Pour batter over each strip to cover.

  3. Cook until bubbles form, then flip and cook until golden.

  4. Serve with maple syrup.
