Croque Monsieur (Gourmet Ham & Cheese Melt)



Ingredients:

  • 4 slices white or brioche bread

  • 4 slices ham

  • 1 cup grated Gruyère or Swiss cheese

  • 2 tbsp butter

  • 1 tbsp flour

  • 1 cup milk

  • ½ tsp Dijon mustard

  • Salt and pepper

Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Make béchamel: In a saucepan, melt butter, stir in flour, whisk 1 minute. Gradually whisk in milk, cook until thick. Add mustard, salt, pepper, and half the cheese.

  3. Layer ham between slices of bread. Top with béchamel and remaining cheese.

  4. Bake on a tray for 10 minutes or until golden and bubbly.


2. Ratatouille Provençale



Ingredients:

  • 1 eggplant, diced

  • 1 zucchini, diced

  • 1 bell pepper, chopped

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 2 tomatoes, chopped

  • Olive oil, thyme, salt, and pepper

Instructions:

  1. Sauté onion and garlic in olive oil until soft.

  2. Add eggplant, bell pepper, and zucchini. Cook 10 minutes.

  3. Add tomatoes and thyme. Simmer 20–30 minutes.

  4. Season and serve hot or cold.


3. French Onion Soup



Ingredients:

  • 3 large onions, thinly sliced

  • 3 tbsp butter

  • 4 cups beef broth

  • 1 tsp sugar

  • 1 tsp flour

  • Baguette slices

  • 1 cup shredded Gruyère cheese

Instructions:

  1. Sauté onions in butter for 25–30 minutes until caramelized. Add sugar midway.

  2. Sprinkle flour, stir 1 minute. Add broth. Simmer 20 minutes.

  3. Pour into oven-safe bowls. Top with toasted baguette and cheese. Broil until bubbly.


4. Quiche Lorraine Mini-Pans



Ingredients:

  • 4 eggs

  • 1 cup cream or milk

  • 1 cup cooked bacon or ham, chopped

  • 1 cup shredded cheese (Swiss or cheddar)

  • Mini tart shells or pie crust cutouts

  • Salt, pepper, nutmeg

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Mix eggs, milk, salt, pepper, and a pinch of nutmeg.

  3. Place crust in muffin tins or mini pans. Add bacon and cheese.

  4. Pour in egg mixture. Bake 20–25 minutes until set.


5. Chicken Fricassée



Ingredients:

  • 4 chicken thighs

  • 1 onion, chopped

  • 2 garlic cloves

  • 1 cup chicken broth

  • ½ cup cream

  • 1 tbsp flour

  • Butter, thyme, salt, and pepper

Instructions:

  1. Sear chicken in butter until golden. Remove and set aside.

  2. Sauté onions and garlic. Sprinkle in flour, then stir in broth.

  3. Return chicken to pan, simmer 20–25 minutes.

  4. Stir in cream and thyme. Simmer 5 more minutes.


6. Moules Marinières (Mussels in White Wine Sauce)



Ingredients:

  • 2 lbs fresh mussels, cleaned

  • 2 garlic cloves

  • 1 shallot, chopped

  • 1 cup white wine

  • 2 tbsp butter

  • Parsley, salt, pepper

Instructions:

  1. Sauté garlic and shallots in butter.

  2. Add wine, bring to a boil. Add mussels, cover and steam 5–7 minutes.

  3. Discard unopened shells. Sprinkle with parsley and serve with bread.


7. Gratin Dauphinois (French Potato Bake)



Ingredients:

  • 4 potatoes, thinly sliced

  • 1 cup cream or milk

  • 1 garlic clove

  • 1 cup grated cheese (Gruyère preferred)

  • Salt, pepper, nutmeg

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Rub baking dish with garlic. Layer potatoes with cheese, salt, pepper, and nutmeg.

  3. Pour cream over. Bake covered 30 minutes, then uncovered 20 more minutes until golden.


8. Salade Niçoise



Ingredients:

  • 2 boiled eggs

  • 1 can tuna (in olive oil)

  • Cherry tomatoes

  • Green beans, blanched

  • Potatoes, boiled and sliced

  • Black olives

  • Dijon vinaigrette

Instructions:

  1. Arrange potatoes, beans, tomatoes, olives, and tuna on a plate.

  2. Top with halved boiled eggs.

  3. Drizzle with Dijon vinaigrette and serve cold.


9. Beef Bourguignon (Budget Version)



Ingredients:

  • 1 lb stew beef

  • 2 carrots, sliced

  • 1 onion, chopped

  • 2 cups beef broth

  • 1 cup red wine

  • 1 tbsp tomato paste

  • Garlic, thyme, flour

Instructions:

  1. Sear beef in batches. Remove.

  2. Sauté onions and garlic. Stir in flour, tomato paste.

  3. Add wine and broth. Return beef. Add carrots and thyme.

  4. Simmer 1½ to 2 hours until tender. Serve with mashed potatoes.


10. Crêpes Suzette (Sweet Orange Crêpes)



Ingredients:

  • 1 cup flour

  • 2 eggs

  • 1 cup milk

  • 1 tbsp sugar

  • ¼ cup butter

  • Zest and juice of 1 orange

  • 2 tbsp sugar

Instructions:

  1. Whisk flour, eggs, and milk into batter. Rest 30 min.

  2. Make thin crêpes in buttered pan.

  3. For sauce, melt butter, add sugar, orange juice, and zest.

  4. Fold crêpes into sauce. Serve warm.


11. Poulet Provençal (Herb Roasted Chicken Thighs)



Ingredients:

  • 4 chicken thighs

  • 2 garlic cloves

  • 1 onion, sliced

  • 1 can diced tomatoes

  • Herbs de Provence (or thyme/rosemary mix)

  • Olive oil, salt, pepper

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Sear chicken in olive oil. Remove.

  3. Sauté onions and garlic. Add tomatoes and herbs.

  4. Return chicken, roast in oven 25–30 minutes.


12. Tartine with Brie and Apple Slices



Ingredients:

  • Baguette slices

  • Brie cheese, sliced

  • Apple, thinly sliced

  • Honey or fig jam (optional)

  • Walnuts (optional)

Instructions:

  1. Toast baguette slices.

  2. Top with Brie, then apple slices.

  3. Drizzle with honey or fig jam.

  4. Garnish with walnuts if desired.
